Yukina, what is it?

Yukina is a beautiful leafy Asian green. It has a similar texture to American mustard greens, but has a more delicate flavor, mild and almost sweet. You can eat it raw, in a salad, or substitute it for spinach or mustard greens in any recipe.

Chinese cabbage, this can be confusing. It is sometimes confused with well-know subspecies, bok choy. Chinese cabbage has crinkly, thickly veined leaves that are cream colored with celadon green tips.

Unlike the strong flavored waxy leaves on round heads of cabbage, Chinese cabbage is thin, crisp, and delicately mild. Napa cabbage is a type of Chinese cabbage. Napa cabbage is popular in Asian recipes because of its distinct taste, similar to celery or bok choy. And napa cabbage is considered healthier.

Fewer calories and a little more protein than the regular cabbage you find in the produce isle. Bok Choy does not form a head; instead it has a smooth dark green leaf blade that forms a cluster reminiscent of mustard or celery. Bok Choy is packed with vitamins A and C and has very few calories.

The exciting thing about these vegetables are they are part of the produce available at the Toledo Farmers’ Market.

See you at market.
